Quinoa Salad with Avocado
2 cups uncooked quinoa
1/3 cup + 2 tsp extra-virgin olive oil
1/4 cup lemon juice
2 tsp Dijon mustard
4 garlic clove, peeled and crushed
2 cups cherry tomatoes, halved
1 small red onion, peeled & cut into slivers
1 cup fresh mint leaves, roughly chopped
1 tsp salt
Fresh ground black pepper
2 perfectly ripe avocados
Cook quinoa in plenty of gently boiling water for about 12 to 15 min. or until it softens (organic quinoa takes a few min. longer). Tip quinoa into a fine sieve, making several steam holes through it with the end of a skewer, leave and drain.
Whisk oil, lemon juice, garlic and mustard with the salt and freshly ground black pepper in a large bowl. Add quinoa and toss with dressing.
Put tomatoes, red onion and mint leaves in a separate large bowl and add quinoa. Toss together. Slice avocados into thin wedges and lay in any design over the tossed quinoa. Serves: 8. Thanks to our patient who submitted this one to us!
1/3 cup rice flour
1/2 cup egg whites (usually takes 3 eggs)
1/2 tsp cinnamon
Whip up in a blender and cook like regular pancake batter
Serving size: 3 pancakes (These are very filling because of the egg whites)

Fake Parmesan Cheese
1 cup cashews
1 clove garlic
1/4 tsp salt
Whir in food processor until looks like sand.
Great on pastas and salads!
